The Pampered Chef Deep Covered Baker Microwave Chicken Fajitas

This isn't something I found on Pinterest, but it is a recipe that I'm frequently asked for, so I wanted to share it with fellow Pinners!

I know what you're thinking, "Ohmygosh, there is NO way that microwave fajitas are edible!" Wrong. This is easily one of my husband's favorite meals, and it's so easy to make! You will need the Pampered Chef Deep Covered Baker, which if you don't have one can be found here.


The Pampered Chef Deep Covered Baker Microwave Chicken Fajitas

Prep Time: As little as 3 minutes
Cook Time: 20-25 minutes

Ingredients:
2-3 Chicken Breasts (1lb)
1 Onion
1-2 Bell Peppers
Fajita Seasoning Packet (I’m partial to the Kroger brand)
Cheese
Sour Cream
Tortillas

Tools:
Pampered Chef Salad Chopper or kitchen shears
Pampered Chef Veggie Wedger or knife to quarter

You'll need these ingredients! (Sour cream and cheese not pictured.)
 Place chicken breasts in the middle of the Deep Covered Baker. Cut the onion into wedges and place on one end.
I love the Veggie Wedger!
Slice the bell pepper(s) and place on the other end. (Hint: whenever our local stores run a great sale on bell peppers, I stock up! I slice them and portion them into freezer bags. I don’t even have to thaw them for this recipe!) Sprinkle chicken and vegetables with fajita seasoning. Use the entire packet for more flavor.
Generously sprinkle the seasoning!
Place the lid on the baker and put in the microwave. Set microwave for 20 minutes. When finished, carefully remove the baker (it will be HOT!) and check the chicken. If necessary, put the baker back into the microwave for another 5 minutes. When thoroughly cooked, shred the chicken. I use the Pampered Chef Salad Chopper for this. It works perfectly! Mix the ingredients, and serve with cheese, sour cream, and tortillas.
